If using Kitchen-Aid pasta attachment, start at # 1 and roll each one through twice on that setting (you might have to cut the sheet in half as it gets longer.) Then continue this process all the way to # 7, moving up 1 number at a time. Then attach your Fettuccini attachment and carefully roll your sheet through. Voila! You now have pasta! Note- add flour if it sticks at any point while rolling. More flour won't hurt!
8. If doing by hand, roll out as thin as possible, then roll-up each sheet like a fruit roll-up and slice to preferred thickness of noodle. Example: Fettuccini like I did, or thicker like Pappardelle.
