The ingredients needed to make Cottage Pie:
  1. Get 3 lbs lean ground beef
  2. Prepare 1 large finely chopped onion
  3. Take 2 cups chopped carrots
  4. Prepare 2 large stalks celery finely chopped
  5. Get 1 bag frozen peas
  6. Prepare 1 cup white mushrooms, chopped
  7. Make ready About 6 tablespoons of olive oil
  8. Make ready 3 oxo cubes (beef stock cubes - can buy on Amazon)
  9. Make ready 1 teaspoon garlic powder
  10. Make ready 2 bay leaves
  11. Take 1 sprig fresh thyme (optional)
  12. Make ready 1 can Campbell’s French onion soup
  13. Prepare 2 heaped tablespoons Bisto gravy powder (buy on Amazon)
  14. Make ready 1 glass red wine
  15. Get About a quarter cup of ketchup
  16. Make ready 3 tablespoons Worcestershire sauce
  17. Prepare to taste Salt and pepper
  18. Take For topping:
  19. Prepare 2 containers Costco mashed potatoes
  20. Prepare 1 tablespoon butter
  21. Prepare 1 cup grated sharp cheddar cheese
  22. Prepare 1 little grated nutmeg
Instructions to make Cottage Pie:
  1. In about 3 tablespoons of olive oil, Brown the beef (add a little salt and pepper)and drain - set aside.
  2. In about 2 tablespoons of olive oil, Sauté chopped onions, celery, carrots, add a little salt and pepper while cooking. Cook on medium heat for about 15 minutes until softened.
  3. Return meat to large pan and add a glass of red wine, can of soup, ketchup and Worcestershire sauce. Continue to cook on medium head stirring occasionally
  4. Add sautéed vegetables
  5. Sauté mushrooms in about 1 tablespoon of oil for about 5 minutes, and add to meat/veg mixture.
  6. Add frozen peas.
  7. Add 3 oxo cubes crumbled.
  8. Put the bisto gravy powder in a mug or cup. Stir in about 1/4 cup cold water. Spoon into meat/veg mixture about a spoonful at a time and stir. This makes a rich gravy.
  9. Check seasoning and continue cooking on low heat stirring occasionally.
  10. Make the potatoes as directed. Put cooked potatoes in large bowl. Add butter, cheddar cheese and nutmeg. Mix well and set aside.
  11. Remove bay leaves and thyme sprig (if used) and Spoon meat mixture into shallow casserole or baking pans (this is enough for two dishes)
  12. Spoon potato mixture on the top making sure sides are sealed with potato mixture. Score top of potatoes with a fork. (Run fork across and down to make a pattern).
  13. Bake in center of preheated 400 degree oven for about 30 minutes or until top is golden brown.
